Instead they rely on:

Seeking cooler surfaces
Reducing activity
Increasing water consumption
These are normal behaviors and often indicate that the bird is attempting to regulate its body temperature—not necessarily that it is already in critical danger.
Ventilation Matters More Than Most People Realize
Many poultry keepers focus on shade alone.
Shade is important.
But moving air is equally important.
Fans, open-sided housing, natural airflow, and avoiding trapped hot air can dramatically improve your birds' ability to cool themselves.
One common mistake is closing up a coop during hot weather to "keep the heat out."
Unfortunately, this often creates an oven while trapping humidity and ammonia inside.
What I Actually Do on My Farm
I don't rely on one cooling method.
Instead I combine several:
Shade cloth where needed
Natural vegetation around my runs
Deep litter that stays cooler
Exhaust fans in my quail barn
Air movement through breeding pens
Plenty of clean drinking water
Reduced stocking density during summer
No two farms are identical, but layering several cooling strategies together has consistently worked better than relying on just one.
Don't Ignore Broody Hens
One topic that surprised many listeners is how vulnerable broody hens can become during periods of extreme heat.
Broody hens often remain in enclosed nest boxes for long periods, increasing the risk of overheating.
